★ 如何在搅拌好的面团中加入食材?
将果干、坚果、巧克力豆等材料加入搅拌好的面团中,可以在搅拌结束后低速混合(适合加入材料量比较少的情况),也可以通过折叠的办法混合(适合加入材料量较多的情况)。但是一定要注意,尽量不要因为加入食材过多而影响面筋的完整性。另外,也要尽可能将食材包裹在面膜里面,不要裸露在外。

★ 基础发酵温度控制在26℃~28℃;湿度控制在70%~75%为宜。
★ 家庭制作面包可不必太过拘泥于器材,有条件的可以使用发酵箱。除非气温特别低,一般情况下,在室温中缓慢发酵是最好的选择。气温过低时可以使用泡沫箱、沥水篮等密闭容器;也可利用烤箱的发酵功能。需要注意的是,使用密闭容器和烤箱时,要加一杯热水调节湿度。另外,烤箱的发酵温度并不会特别精准,我们可以采取开启、关闭的办法进行调节。
★ “翻面”的作用是什么?
“翻面”是指在整个基础发酵过程的前半段,以挤压、折叠的手法将发酵产生的气体排出,继续进行发酵操作。其目的在于强化面筋、活化酵母,使面包组织更加细腻。

D.整形 包括排气、分割、滚圆、松弛、整形。
排气:排除附着在网状麸质中的一些二氧化碳(过多的二氧化碳会令酵母窒息);使麸质松弛;消除面团内外部分的温度差(通常面团外部温度会低于内部温度);营养物质的重新分配,进行新一轮营养循环。
滚圆:最终成形前的初步定形,通过滚圆操作再次拉伸麸质,帮助其形成表面张力。
松弛:也称为静置,使麸质得到松弛,后续的整形更加容易。

滚圆后的面团盖保鲜膜,松弛15~20分钟。
★ 滚圆后的面团体积较之以前会明显变小,这是因为表面的薄膜在滚圆的操作中变得紧绷、光滑。
★ 滚圆后的面团一定要经过一段时间的松弛,否则紧绷的面筋会被擀压至断裂。
★ 滚圆的重点并不仅仅是整理出形状,而是使一份面团形成完整、光滑、紧绷的表面。滚圆可以将面团因分割产生的切口及断开的面筋结构,利用自身的黏着性重新揉入面团内部,并利用表面结构完整的部分包裹住面团,一方面可以防止粘黏;另一方面,光滑平整的这一面也是面包的“脸面”,在后期的整形操作中,始终处于表面位置。因此,在分割面团时一定不要切得太碎,必须以大片完整的面筋为主,少量用来补重的面团要包裹在底部。需要注意的是,滚圆时,面团表面紧绷即可,过度滚圆也会使面筋断裂。如遇面团由紧绷变得松弛、表面出现断裂或凹凸不平,补救的办法是待它充分松弛之后,折叠并找出一个完整光滑的“面”来重新滚圆。面筋断裂对成品有一定影响,操作一定要慎重。

★ 如果初学时不能熟练掌握滚圆的手法,可以利用下图所示的方法:
将面团光滑的一面朝上,大的面团包裹住用来补重的小面团,双手拿着将四周收至底部,不断变化角度重复数次。直至表面呈紧绷、光滑状,捏紧收口即可。注意力度要均匀,否则容易造成形状不规则。

山形吐司最后发酵达到九分满,表面刷蛋液、喷水或做其他装饰,再入炉烘烤。
★ 第一次卷起后要将面团静置松弛15分钟再进行第二次擀卷。
★ 为什么山形吐司的三座山峰高度不一致?
首先,在分割面团时要尽可能精确;其次,三个面团在整形过程中的力度要一致,排气的程度、擀开的长度、卷起的松紧度等都要保持一致,才能使面团在后期发酵过程中呈现均等的膨胀。
整形过程中的每一步,在遇到大的气泡时,都要以轻拍或按压的手法排除,否则这些气泡在后期发酵中会持续膨胀,影响外观,如过多的大气泡没有排除干净还会影响口感。因此,从基础发酵完成后的排气开始,每一步都应该耐心对待面团,通过擀、压、拍等手法尽可能地将大气泡排出,才能使成品组织均匀细致。(不需要完全排气的面团除外)

使用刮板辅助拿取面团或为面团翻面,徒手操作会将面团拉扯变形。
★ 在整形操作的过程中,可在双手涂少量黄油防粘,也可使用少量高筋粉作为手粉来操作。注意,手粉的用量不能太大,否则会减弱面团和操作台之间的摩擦力,使操作变得困难。
★ 整形的原则是,始终将有完整面筋的一面(滚圆时的表面)对着外面,这也是为何在整形过程中多次出现“翻面”操作的原因。
★ 操作过程如果感觉擀开的面团迅速回缩,则需要盖保鲜膜继续松弛,强行擀开或滚圆过度都会导致表面的面筋断裂。
★ 造型过程中始终要保持施力均匀、一致,并确保所有收口处切实捏紧,否则会影响膨胀方向,导致变形。
★ 整型操作的手法要遵循“抓皮不抓肉”的原则,在收紧和折叠面团的时候,只黏合表面筋膜即可。同时,对表层薄膜的收紧会使表面变得更加光滑。
E.最后发酵 也称为二次发酵。事实上,从完成基础发酵的面团排气后被分割起,二次发酵就已经开始了。整形结束后通过二次发酵完成面团的最后膨胀,达到适合烘焙的大小。二次发酵对面包味道的改变不如基础发酵那样明显,但发酵过程中产生的二氧化碳和乙醇也会使面团的风味更加丰富。通常情况下,经过二次发酵的面团会达到成品大小的80%~90%,因为面团在烘烤阶段还会膨胀。

若按压后留有浅浅的凹痕则为发酵完成;若指痕迅速回弹平复则发酵不足;如形成很深的凹痕且有塌陷则为发酵过度。
★ 最后发酵的温度通常比基础发酵温度略高,以30℃~38℃为宜。
★ 整形后的面团要预留出面包完成最终膨胀的空间,均匀排列在烤盘上。发酵过程中至结束发酵前不能再触碰面团,否则很容易造成塌陷。
F.烘烤 烘烤的目的是去除多余的水分,使所有的味道集中。包括入炉前的刷面和表面装饰。在烘烤阶段,面团发生了三个重要的反应:淀粉的凝胶化、糖的焦化以及蛋白质的凝固。这也是决定面包品质好坏的最后几个关键点。

刷面时力道要轻柔,毛刷与面团呈30度左右夹角,利用毛刷的腹部轻轻抚过。切忌垂直操作,那样会很容易伤到面团,导致表面不平整。
★ 一定要在结束二次发酵前提前预热烤箱,以免面团因未能及时入炉造成发酵过度,导致塌陷或膨胀度不佳。即使是不刷蛋液的素面,在完成最后发酵入炉前的面团表面喷少许水,也会更加有利于膨胀。一旦面包表面因烘烤结皮,就会阻碍面团膨胀。
★ 家用烤箱不要同时放入两盘面包,不管是扁平的烤盘还是高大的吐司模。正确的方法是,使面包位于烤箱的垂直正中位置。烤制过程中要及时观察上色,一旦达到满意的上色程度,便要在表面加盖锡纸。判断面包是否成熟:成熟的面包,用手敲打面包的底部,能听到有空洞的回响而不是沉闷的声音。
G.冷却 冷却是烘烤阶段的延伸。冷却的过程使面包继续蒸发水分,逐渐达到最佳状态,从而使风味更加浓郁。

其他面包出炉后也要及时脱模或用铲子从烤盘上铲出,置于晾网上晾凉。
★ 不管使用模具还是烤盘直接烘烤,出炉后的面包一定要及时脱模并置于网架上晾凉,切忌将出炉的面包留在模具或热的烤盘上,这样会使面包内部的水气无法及时散发而渗入到内部,形成面包塌陷等问题。
H.保存及品尝 面包与空气接触容易老化,出炉后完全凉透的面包要及时密封以保持柔软的口感。手作面包在常温密闭环境下保存三天左右对口味没有太大影响。如需长时间存放,可利用密封袋或密封盒冷冻保存(大型的吐司最好提前切片)。食用前自然解冻后,入炉烘烤一下,即可恢复新出炉的口感。

★ 带有馅料、芝士、肉类、水果的面包不适合冷冻保存,请及时食用完毕。
★ 为保持酥脆的外皮,硬壳面包应置于纸袋中储存。
★ 不要将面包放在冷藏室,即使在密封的保鲜袋中,面包也会脱水,口感变得粗糙。
★ 一定要将面包完全凉透后再密封,防止未完全排除的湿气在袋中凝结,从而导致面包发霉。
