原料 牛腩肉400克,干豆角100克。
材料 葱段20克,姜片15克,香叶5克,八角2粒,精盐、味精、鸡精各1小匙,香油1/2小匙,清汤适量,熟猪油1大匙。

牛腩肉剔去筋膜,洗净,放入清水盆内浸泡去血水。

干豆角洗净,放入盆中,加入温水浸泡2小时,使其涨发。

锅中加入清水、牛腩块烧沸,焯烫一下去血水,捞出沥水。
